Curried Plantain
Ingredients:
2 Yellow plantains
8 sundried tomatoes (soaked for 15 minutes)
1 teaspoon dulce flakes
2 tablespoon Sour orange juice
1 tablespoon lime juice
1 teaspoon Curry powder
15 peppermint leaves
½ teaspoon Celtic sea salt
Preparation: Mix all ingredients in a bowl cover and let it marinate for 20 minutes. Serve on a bed of romaine lettuce.
